ALFREDO SAUCE

There are times in life when you CAN have your cake and eat it, too. This recipe for a very lightened, very OP (in Weight Watcher parlance, "on program") alfredo sauce has been around for a while, but I never really thought it would bear any resemblance to the real thing, and so I never made it. My bad!


The trick to this sauce is that it must be brought to a boil, the ingredients must be fully incorporated, and then it must simmer. In all, you need to cook this for 20 minutes to end up with a thick, rich, tasty alfredo sauce that contains no cream, very little fat, and is positively decadent.


I seasoned some chicken cutlets with garlic salt and pepper, then sauteed them in a nonstick skillet that had been sprayed with olive oil nonstick spray. I served a 3 ounce chicken cutlet over 1 cup of spaghetti and topped it all with 1/4 of the sauce for a mere 9 points. With my glass of Sangiovese, this was quite a repast. Next time I'm going to try it with shellfish.

WW Alfredo Sauce - 4 servings, 2 WW point per serving
1 cup skim milk
1 tbs light butter (I used Olivio Light)
6 wedges Laughing Cow Lite cheese (I used French onion)
1 tbs grated Parmesan cheese

Bring to a boil, whisking to keep the sauce from scorching, then lower and simmer for at least 20 minutes, whisking occasionally, until thickened.

That laughing cow cheese is good stuff, isn't it? In fact, I watched an episode with Rachel Ray and one of her guests was the "Hungry Girl". I guess this lady wrote a very successful dieting book, maybe you've seen it out there. One of her top tips for dieting was that laughing cow cheese! She puts it on bagels, toast, omelettes, etc. I'm glad to hear the laughing cow makes a good alfredo sauce.

I made this for dinner tonight! Ronzoni Smart Taste spaghetti, this al fredo sauce and chicken sausage. Absolutely delicious!! Definitely a keeper! Thanks!
